Serrano Pepper Sauce - Homemade

Homemade hot sauce from Serrano and Jalapeno Peppers from my garden. Any combination of peppers can be used. The Serrano's are med. hot, but the brave can use Habaneros!!! After reading the ingredients on a Tabasco bottle, I said, "I can do this!!"

Ingredients
- 2 cups water
- 1 1/2 cups Distilled White Vinegar
- 1/2 cup Seasoned Rice Vinegar
- 15 Dried Serrano Peppers
- 5 Dried Jalapeno Peppers
- 2 Cloves Garlic
- 1 t Salt

Step 1
Dry the peppers. You can wait till the peppers turn red on the plant. (in a food dryer, or air dried for a couple of weeks)
Roast dried peppers in oven at 350 deg. for 5 min. till aromatic
Add to water, garlic and onions in med. pan and simmer for 15 min.
Add Vinegar and Salt and simmer 10 more min.
Carefully blend in blender on liquefy till fully blended.
Using a fine mesh strainer, strain sauce into large bowl then ladle into small sterile jars and process for canning or immediately refrigerate.
Makes one quart
