Ingredients
- 1 1 lb bag lentil beans
- 6-8 cups water
- 2 large onions, chopped
- 1 large green pepper, chopped
- 1 (48 oz can) diced tomatoes
- 1 (14 1/2 oz) vegetable broth
- 1/3 cup oil
- Vegeta
- paprika
- black pepper
- basil
- oregano
- 1/4 cup rice

Preparation
Step 1
Wash lentils.
In a large pot, bring lentils and water to a boil.
Reduce heat.
Add onions, green pepper, diced tomatoes, vegetable broth, oil and seasonings.
Cook at medium for 30 minutes.
Add rice and cook another 30 minutes or until rice is cooked and the soup is correct consistency. You may need to add more water if too thick or cook a little longer if too thin.
