Ingredients

  • 4 tsp olive oil
  • 1 small onion
  • 2 garlic cloves
  • 1/2 tsp ground cumin
  • 1 15-ounce can of low-sodium white beans
  • 1/2 cup low-sodium chicken broth
  • 1/2 tsp salt
  • 2 cups packed shredded romaine lettuce
  • 1/3 cup fresh cilantro
  • 2 tsp fresh lime juice
  • Freshly ground black pepper
  • 4 whole wheat flour tortillas
  • 2 cups shredded cooked chicken
  • 1 jalapeno
  • 1/2 ripe avocado
  • 1/2 cup tomatillo salsa
  • 1/2 cup low-fat Greek-style yogurt

Preparation

Step 1

Heat 2 tsp oil in skillet
Add onion, cook for 3 minutes
Add garlic and cumin, cook for 30 seconds
Add beans, broth, 1/2 tsp of salt, cook for 2 minutes
Transfer bean mixture to food processor
Put lettuce, cilantro, 2 tsp oil, lime juice, salt, pepper in bowl and toss
Wrap the tortillas in paper towel in microwave for 30 seconds

To Build
Spread 1/3 cup of bean puree in the center of tortillas
Sprinkle 2 tsp jalapeno
Top with 1/2 cup of shredded chicken
1/2 cup of lettuce mixture
2 slices of avocado
Serve with salsa and yogurt
