Ingredients

- cup a cup firm tofu cubes
- 2 2 2 tbsp minced red onions
- 2 2 2 cloves garlic, minced
- 4 4 4 scallions, whites and greens, sliced
- 1 1 1 tsp red pepper flakes
- 2 2 2 eggs, lightly beaten
- 1/2 1/2 1/2 lb med shrimp,peeled and deveined
- 4 4 to oz rice noodles, cooked according to package instructions
- 1 1 1 cup bean sprouts
- 1/4 1/4 1/4 bottled pad Thai sauce
- 2 2 2 tbsp chopped roasted peanuts
- 1 1 1 lime, cut into wedges
- 4 among 4 plates. Garnish with the peanuts, lime wedges, scallion greens and more pepper flakes, if you like,
