Ingredients
- 1 8-oz can crushed pineapple, undrained
- 4 medium bananas, mashed
- 3 cups sugar
- 3 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
- 1-1/2 tsp vanilla
- 1-1/2 cup olive oil
- 3 beaten eggs
- 1 cup nuts

Preparation
Step 1
Beat eggs, add sugar. Add remaining dry ingredients alternately with the other ingredients. DO NOT BEAT. Mix with spoon.
Bake at 350 degrees in a greased and floured tube pann for 1 hour and 20 minutes, or until done (watch cake after 1 hour of baking).
Needs no frosting, but if you prefer to frost, mix powdered sugar, coconut extract and a little Half & Half. Drizzle this over top of warm cake after you have taken it out of the pan.
