Ingredients

  • 2 cups old fashioned rolled oats
  • 2/3 cup dried blueberries
  • 2 tabelspoons flax seeds
  • pinch of salt
  • 1/2 cup honey
  • 6 tablespoons vegetable or canola oil
  • 1/4 cup pure maple syrup
  • 1/2 teaspoon ground cinnamon

Step 1

1. Preheat the oven to 350. Line two 5x9 inch loaf pans with parchment paper, leaving extra for overhang; set aside.

2. In a medium size bowl, combine the oats, blueberries, flax seeds, and salt.

3. In a small, heavy bottomed saucepan over medium heat, heat the honey, oil, and maple syrup. When the mixture ocmes to a simmer, remove the pan from the ehat and stir in the cinnamon. Pour the mixture over the oat mixture. using a heatproof spatula, stir until the oats are completely coated. Pour the mixture into the preapred pans and firmly press into the bottom of the pans. Bake until the edges begin to brown, 20 to 25 minutes.

4. Allow the bars to cool in the pan. While the bars are still slightly warm, grasp the parchment paper and lfie the bars out of the pans. Cut each loaf crosswise into 6 bars, for a total of 12 bars, and transfer to a rack to cool completely. Wrapt he bars individually with waxed paper. Pack in a zipper top plastic bag or container. Alternatively, layer unswapped bars in an airtight container, separating the alyers with waxed or parchment paper.
