Ingredients
- Cake ingredients:
- 2 cups sugar
- 1 cup olive oil
- 4 eggs
- 2 cups grated carrots
- 2 tsp cinnamon
- 1 tsp salt
- 2 tsp baking powder
- 2 cups flour
- 1/2 cup chopped nuts (optional)
- Frosting Ingredients:
- 1 stick butter, softened
- 8 oz cream cheese, softened
- 1 lb box powdered sugar
- 1 tsp vanilla
- 1/2 cup chopped pecans.

Preparation
Step 1
For Cake:
Cream sugar and oil. Add eggs, one at a time, beating well after each addition. Add carrots and mix thoroughly.
Mix dry ingredients together and add to creamed mix.
Pour into 2 greased and floured 9" cake pans and bake at 350 degrees for one hour.
For Frosting:
Cream butter and cream cheese together. Sift sugar into mixture and beat well. Add vanilla and nuts. Frost cake when cooled.
