Ingredients
- 4 T olive oil
- 1 onion, sliced
- 2 carrots
- 1 stalk celery
- 1 zucchini
- 1 C white cabbage
- 2 tomatoes
- 2 potatoes
- 1 C white beans, pre-soaked
- 1/4 tsp. oregano
- 1/4 tsp. basil
- 6 C beef broth
- salt and pepper to taste

Preparation
Step 1
Saute onion in olive oil, add carrot and celery. Move to slow cooker. Saute zucchini, garlic, and cabbage, and remove to slow cooker. Add other ingredients to slow cooker. Cook on low 6 - 8 hours.
Serve with grated parmesan and garlic bread.
