Mars Bar Stuffed Chocolate Chip Cookie Cups

Ingredients
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/4 cup white sugar
- 1 egg
- 1 tsp vanilla extract
- 2 cups + 3 tbsp plain flour
- 3/4 tsp baking powder
- 1/3 tsp baking soda
- dash of salt
- 1 cup chocolate chips
- 12 fun size Mars Bars

Preparation
Step 1
Preheat the oven to 350 degrees and line a 12 cup muffin pan with cupcake liners.
Using an electric mixer, beat the butter until smooth. Add the brown sugar, white sugar, egg and vanilla extract and beat until well blended.
In a separate bowl, combine the plain flour, baking powder, baking soda and salt.
Pour half the flour mixture into the butter mixture and beat on a low speed until just combined.
Mix in the remaining flour mixture and then the chocolate chips by hand, being careful not to over mix.
Scoop a small tablespoon of dough into each cupcake liner and flatten into the base. Top with a fun size Mars Bar.
Top each Mars Bars with a medium scoop or large tablespoon of cookie dough. Flatten slightly.
Bake for about 12 minutes, until lightly golden. Makes 12 Mars Bar cookie cups.
Note: You will have a little cookie dough left over after making this recipe, but just roll some tablespoons of dough into balls, pop them onto a lined baking tray and bake them for 8-10 minutes.
