Ingredients

  • 1 1/2 lbs beef, cubed
  • 3/4 C. uncooked barley
  • 1/2 C green peppers, diced
  • 2 cloves garlic, minced (I just chopped mine)
  • 1 small onion, chopped
  • 1/2 C. celery, chopped
  • 1 C. baby carrots in 1" pieces (I used a regular carrot and cut it in 1" pieces)
  • 1 tsp. thyme
  • salt and pepper
  • 3 (14 1/2 oz. cans) beef broth
  • 1 (28 oz. can) petite diced tomatoes
  • 1 1/2 C water

Preparation

Step 1

Place all ingredients into slow cooker. Cook on low for 8 to 9 hours or high for 5-6 hours or until carrots are tender.
