High-Energy Peanut Bars

Ingredients
- 2 cups old fashioned rolled oats
- 1/2 cup crushed lightly salted peanuts
- 6 tablespoons light corn syrup
- 6 tablespoons honey
- 1/4 cup vegetable or canola oil
- 1/4 cup creamy peanut butter

Step 1
1. Preheat the oven to 350. Line two 5x9 inch loaf pans with parchment paper, leaving extra for overhang; set aside.
2. In a medium size bowl combine the oats and peanuts.
3. In a small heavy bottomed saucepan over medium ehat, bring the corn syrup, honey, oil, and peanut butter to a simmer. Stir to ensure taht the peanut butter is well incorporated. Remove from the heat and pour the mixtur eover the oats. Stir the oats until they are completely coated with the peanut butter mixture. Pour the mixture into the preapred pans and firmly press inot the pans. bake until the edges are golden brown, 20 to 25 mintues.
4. Allow the bars to cool in the pans. While theya re still slightly warm, grasp the parchment apper and pull the bars out of the pans. Cut each loaf crosswise into 6 bars, for a total of 12 bars, and transfer to a rack to cool completely. Wrapt he bars individually with waxed or parchment paper or plastic wrap, seal with tape, and pack in a zipper top plastic bag or other container. Alternatively, layer unwrapped bars in an airtight container, separating the layers with waxed or parchment paper.
