Ingredients
- One Giant end of summer zucchini or several small ones
- 1 1/2 pounds cooked baby shrimp
- 2 c. shredded Monterey jack cheese
- 1 c. Italian seasoned Panko bread crumbs
- (DO NOT use regular Progresso bread crumbs )

Preparation
Step 1
Split one Giant Zucchini in half (or several smaller ones. )Scoop out soft center seeds and meat (well, that’s what I call it. ) Brush the zucchinis with olive oil and roast in 400 degree oven for 45-60 minutes. Of course, if using smaller zucchini, it won’t take that long.

Mix together: Scooped out zucchini stuff with shrimp, jack cheese,Panko bread crumbs.

When zucchinis are cooked, stuff with shrimp filling and heat until cheese melts and filling is heated through.

This can be served as a one dish meal.
