***Monku in Nevada’s Cranberry Nut Bread

My Mom made this every Christmas. It is best warm out of the oven, or toasted, and covered with Irish butter!
As part of an appetizer , serve with a ripened washed rind cheese -- Oh My!

Ingredients
- 2 cups all-purpose flour, sifted
- 1 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 3/4 cup orange juice
- 1 tablespoon grated orange peel
- 2 tablespoons vegetable oil
- 1 egg
- 1 cup fresh chopped cranberries
- 3/4 cup chopped nuts

Preparation
Step 1
Preheat oven to 350 degrees. In a large mixing bowl, combine flour, sugar, baking powder, salt and baking soda. Stir to mix well. Add orange juice, orange peel, oil and egg to dry ingredients. Stir until well blended. Stir in cranberries and nuts. Pour into greased 9 1/2 inch loaf pan. Bake 55 – 65 minutes.
