Ingredients
- 4 chicken fillets - breasts or thighs.
- 8 sheets of phyllo dough – thawed in frig.
- 1/2 cup Pesto sauce
- 1/2 cup mayonnaise
- 3/4 cup sliced scallions (green & white parts)
- pepper and salt for seasoning
- 3/4 lb. melted butter
- 1/2 cup shredded Parmigiano Reggiano

Preparation
Step 1
. Mix together: pesto sauce, mayo, green onions, pinch of salt.
2. Pat chicken dry with paper towels and season with salt and pepper.
3. Brush melted butter on 2-phyllosheets per chicken piece. Place the chicken on top of the puff pastry. Spread pesto cream over chicken. Fold phyllo dough around chicken, brushing the dough with butter, making a neat little package.
4. Place phyllo package seam side down in baking dish.
5. Lightly brush the top with the butter, as well.
6. Sprinkle shredded parm over tops.
Pop them in a preheated oven, and bake at 400F (200C) for 30 to 35 minutes.
