Spanish Bar Cake

A traditional Spanish cake with spices and raisins and frosted with a cream cheese based frosting. Slice into bars and serve. Perfect for a cool autumn day.

Ingredients
- FROSTING:
- 2 cups flour
- 1 1/2 cups sugar
- 1 1/2 teaspoons baking soda
- 1 tablespoon cocoa
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 teaspoon nutmeg
- 1 teaspoon allspice
- 1/2 cup oil
- 2 cups applesauce
- 2 eggs
- 1 cup raisins
- 8 ounces cream cheese, softened
- 4 tablespoons butter
- 2 teaspoons vanilla extract
- 2 1/2 cups confectioners' sugar
- 1/3 cup milk
- 1 tablespoon fresh lemon juice or 1 tablespoon lime juice

Preparation
Step 1
Mix the dry ingredients together in a large mixing bowl.
Carefully mix in the oil, applesauce and egg, until well blended. Stir in the raisins.
Pour into a 9 x 13 pan.
Bake at 350°F for 30-35 minutes. If you are using a tube pan, cook for 40-45 minutes.
Cool thoroughly and frost if desired.
Combine frosting ingredients in bowl. Beat well, adding more milk or confectioners' sugar to make it smooth and easy to spread.
