Ingredients
- 20 sardines (about 2 1/2 lb)
- 1/4 cup extra-virgin olive oil
- 4 plum tomatoes, peeled, seeded, and diced
- Kosher salt, as needed
- 1 cup plain dry bread crumbs
- 1 tsp dried oregano
- 3 tbsp chopped flat-leaf parsley leaves
- 1 garlic clove, finely chopped
- 2 tbsp pecorino
- 2 tbsp white wine

Preparation
Step 1
Preheat the oven to 400 degrees F.
Clean the sardines and remove the heads if you prefer. Rinse and dry the sardines, and
place them in a baking dish large enough to perfectly fit all the sardines in one layer.
Drizzle with the extra-virgin olive oil and sprinkle with the diced tomatoes. Season with salt.
Mix the bread crumbs with the oregano, parsley, garlic, and cheese. Moisten the bread crumb mixture with the white wine and sprinkle all over the sardines.
Bake until the sardines are cooked and the bread crumbs are crisp and golden, about 10
minutes. Serve hot.
