Ingredients

  • 1/3 C olive oil
  • 2 cloves garlic, minced
  • 1/2 C coarsely chopped carrots
  • 1/2 C coarsely chopped celery
  • 1/2 C coarsely chopped onion
  • Turkey Italian Sausage
  • 14 1/2 oz. Italian stewed tomatoes
  • 1 C small pasta
  • spinach
  • 19 oz. canned, undrained cannellini beans
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • grated parmesan cheese

Preparation

Step 1

Heat oil in large pot over medium heat. Add onion and garlic and sauté 1 minute. Stir in carrots and celery; cook 3 - 4 minutes until nearly tender. Add sausage and cook 3 minutes, stirring often.

Add broth and tomatoes; increase heat to high, cover and bring to boil. Add pasta; reduce heat and simmer 10 minutes, stirring occasionally until pasta is almost tender. Stir in spinach and simmer uncovered until wilted.

Add un-drained beans, salt, and pepper. Simmer 5 minutes to heat through. Sprinkle with parmesan in bowls as it is served.
