Ingredients

  • 1/4 cup fine bread crumbs
  • 1 about 3/4 thick veal( 1 1/2 lbs.) or boneless chicken breasts(cut in pieces)
  • 2 tabl. Margarine
  • 1 envelope or about 2 cups of instant beef broth
  • 1/2 cup boiling water (xtra if needed)
  • 3 Tabl. Lemon juice
  • 3 Tabl. chopped Parsley
  • 1/2 teas. salt
  • 1/8 teas. pepper
  • 1-2 eggs
  • Garlic powder

Step 1

Spread breadcrumbs on waxed paper. Press the veal or chicken into crumbs after dipping in beaten egg, coating both sides lightly. Melt butter or Margarine in a large non-stick skillet. Brown meat on both sides over moderate heat. Breadcrums are better if a little garlic powder is added. Dissolve instant beef broth in boiling water. Add to skillet with Lemon juice, parsley and salt and pepper. Cover and bring to a boil, simmer 30 minutes or until meat is tender. Serve over noodles.
