Ingredients

  • 1 chopped onion
  • 3 cloves garlic, minced
  • 1 tbs olive oil
  • 2 tbs chili powder
  • 1 tsp oregano
  • 1 (28 oz) can crushed tomatoes
  • 1 (32.5 oz) chicken broth
  • 1 cup yellow corn
  • 1 cup white hominy
  • 1 (4 oz) chopped green chiles
  • 1 (15 oz) can black beans, drained and rinsed
  • 1/4 cup chopped cilantro
  • 2 chicken breasts, cooked and shredded
  • Toppings
  • crushed tortilla chips
  • sliced avocado
  • shredded jack or cheddar cheese
  • sour cream

Preparation

Step 1

In a medium stock pot, heat oil over medium heat.
Saute garlic and onions until soft. Stir in chili powder, oregano, tomatoes and broth.
Bring to a boil and simmer 5-10 minutes.

Stir in corn, hominy, chiles, beans, cilantro and chicken. Simmer for 45 minutes to an hour.

Top with crushed tortilla chips, avocado slices , cheese and sour cream.
