Ingredients

  • 1/2 c. olive oil
  • 2 stalks celery, diced
  • 6 green onions, chopped
  • 2 cloves garlic, minced
  • 1 package frozen chopped spinach, thawed with water squeezed out.
  • 2 carrots, grated
  • 2 c. rice, uncooked
  • 4 c. chicken broth
  • Salt and pepper to taste
  • 3 tbsp. butter
  • 3 tbsp. parsley
  • Parmigiano Reggiano, shredded

Preparation

Step 1

In a large saucepan, heat oil; add celery, onions, spinach and carrots. Cook over low heat for 20 minutes, stirring constantly.

Add rice. Cook 5 minutes stirring.

Add broth, salt and pepper.

Cover and cook over low heat for 20+ minutes more, or until rice is done.

Add butter and parsley.

Serve with Parmigiano.
