Ingredients

  • Pie Crust:
  • 1/4 lb. butter
  • 6 Tbsp. sugar
  • 2 eggs
  • 2 C flour
  • 1 tsp. baking powder
  • Filling:
  • 1 lb. Philadelphia brand cream cheese (2 blocks)
  • 1 1/2 C sugar
  • 6 Tbsp. flour
  • 4 eggs yolks (beaten) -- (reserve egg whites)
  • 3 C milk
  • 1 tsp. vanilla (or 4 tsp. lemon juice)

Preparation

Step 1

Pie Crust:
Cream butter. Add sugar. Mix in eggs, flour and baking powder. Spread dough to fit pan. (My Mom always put it up the sides of the pan.)

Cream cheese until creamy. Add sugar, flour, egg yolks & flavoring. Add milk slowly until cheese is all dissolved.

Add a little salt to egg whites and beat until stiff. Fold into cream cheese until egg whites are dissolved.

Pour into crust and sprinkle top w/ cinnamon.

Bake on moderate oven (350 degrees) about an hour, or even longer watching oven @ 45 minutes, and then @ 15-minute intervals. You can tell when the custard is set and the crust gently browns and comes away from the pan a bit.
