*** Zucchini Fritters

This a recipe my Mom found in a local newspaper. My poor kids had them more often than they care to remember. Fritters just might be my favorite way to eat vegetables!

Ingredients
- 2 c. shredded zucchini, drained
- 2 eggs, slightly beaten
- 1/4 tsp. salt
- 1/2 tsp. baking powder
- 1/2 c. flour
- 2 tbsp. grated Parmigiano

Preparation
Step 1
Mix all ingredients together and drop batter by tablespoons into half inch of hot oil in skillet. Fry until golden brown on both sides.

Drain on paper towels.
