Ingredients

  • Doughnuts:
  • 1 1/4 cups flour
  • 3/4 cup sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup canola or vegetable oil
  • 1/2 cup buttermilk
  • 1 egg
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla
  • Glaze:
  • 2 cups confectioners' sugar
  • 1 tablespoon lemon zest
  • 1 teaspoon fresh lemon juice
  • 2 tablespoons milk

Preparation

Step 1

Heat oven to 350 degrees F. Coat the doughnut pan with non-stick cooking spray. Set aside.
Combine flour, sugar, baking soda and salt in a bowl; make a well in the center and set aside. In a small bowl, whisk together oil, buttermilk, egg, lemon juice, zest and vanilla; add to well and mix into a smooth batter.

Spoon batter into a resealable plastic bag. Cut one of the corners and squeeze batter into the prepared doughnut pan about 3/4 full. Bake until golden and a toothpick inserted into doughnut comes out clean, about 13-15 minutes. Remove from the oven and cool in the pan on rack for a few minutes. Carefully turn doughnuts out directly onto rack and cool fully.

For the glaze:
Whisk together confectioners' sugar, lemon zest & juice, and milk until smooth. Add additional milk, a little bit at a time, to thin the glaze, if necessary. When doughnuts are fully cooled, dip tops of doughnuts into glaze and return to wire rack until glaze is set.
