CE - Ratatouille Sloppy Joes

This recipe is made with a great sauce that I found in the Clean Eating Magazine called Everyday Marinara Sauce. Having the marinara sauce already made, makes this dish go together in a snap.

Ingredients
- 1 tsp. olive oil
- 1 lb. extra-lean ground bison
- 3 cloves garlic, minced
- 1 med. onion, diced
- 2 tsp. chili powder
- 3/4 tsp. mustard powder
- 1/8 tsp. cayenne pepper
- 1 sweet red bell pepper, diced
- 1 med. zucchini, diced
- 1 1/2 c. Everyday Marinara Sauce (on p. 62 of the Nov./Dec. 2010 of Clean Eating Magazine)
- 1 Tbsp. Sucanat or raw honey
- Sea salt and fresh ground black pepper, to taste
- 8 Thin Whole-Grain Sandwich Buns, toasted

Step 1
1) Heat a large non-stick skillet over med-hi heat. Add oil, bison, garlic, and onion and cook for 5 to 8 mins., breaking up meat with a spoon while cooking, until no liquid remains and bison is browned. Add chili powder, mustard, and cayenne, stir well and continue to cook for 1 more minute. Pour bison mixture into a bowl and set aside.
2) Return pan to heat and add diced bell pepper and zucchini, stir and saute for 3 to 4 mins. Add bison mixture back to pan, stir well and reduce heat to medium. Cook for an add'l 5 mins., stirring often, or until all vegetables are tender and cooked throughout.
3) Add Everyday Marinara Sauce, 2 Tbsp. water and Sucanat (or Raw Honey) to pan, stirring until meat and veggies are coated. Cook until sauce is hot and bubbling. Season with salt and black pepper. To serve, sandwich 3/4 c. bison mixture between each bun.
