Ingredients
- 3 15OZ CAN GREAT NORTHERN, PINTO, OR CANNELLONI BEANS
- 1 1/2 CUPS CHOPPED RED, GREEN, AND OR YELLOW SWEET PEPPERS
- 1 CUP COARSELY SHREDDED CARROT
- 1/2 CUP SLICED GREEN ONIONS
- 2 CLOVES GARLIC, MINCED
- 2 TSP DRIED OREGANO, CRUSHED
- 1 TSP GROUND CUMIN
- 2 14 OZ CAN CHICKEN BROTH
- 2 1/2 CUPS CHOPPED COOKED CHICKEN OR TURKEY
- SHREDDED MONTERREY JACK CHEESE

Preparation
Step 1
1 DRAIN AND RINSE 2 CANS OF THE BEANS; PLACE IN SLOW COOKER. USE A POTATO MASHER OR FORK TO MASH BEANS. DRAIN AND RINSE THE REMAINING 1 CAN OF BEANS (DO NOT MASH) ADD BEANS, SWEET PEPPERS, CARROT, GREEN ONIONS, GARLIC OREGANO, CUMIN, AND 1/2 TSP SALT TO THE MASHED BEANS. STIR IN BOTH UNTIL COMBINED.
2 COVER COOK ON LOW FOR 6-8 HOURS OR HIGH FOR 3-4 HOURS
3 USING LOW HEAT TURN SLOW COOKER TO HIGH HEAT SETTING STIR CHICKEN INTO THE CHILI COVER COOK ABOUT 15 MINUTES MORE OR UNTIL CHICKEN IS HEATED THROUGH
4 SPOON CHICKEN INTO BOWLS, IF DESIRED SPRINKLE WITH CHEESE.
