Ingredients
- Ptireland, this is a no-bean chili that won lst prize in the Parade Magazine's contest a few years back, selected over 14,000 entires. Yup, it's true. SO I made it for a chili cookoff contest at work, WON FIRST PRIZE and renamed it.
- CHILI - NO - BEANO
- Serves 8
- 2 tbs olive oil
- 2 lbs sirloin steak, 1" cubes
- 1/2 lb lean ground beef
- 12 oz chorizo sausage, removed from casing, cut in 1/2" cubes
- 1 lg yellow onion, coarsely chopped
- 1/4 C chili powder
- 1 tbs garlic salt
- 2 tsp cumin
- 1 tsp dried basil
- 2 cans (14oz) peeled whole tomatoes undrained
- 2 cans (14 oz beef broth
- 1 C chopped cilantro
- 1 cinnamon stick (you can omit this if the idea of cinnamon doesn't rock you, it will impart a subtle taste that makes people go "hmmm, was IS that?)
- 3 bay leaves
- 2 green jalapenos slit lengthwise, 3 times each
- 1 tbs yellow cornmeal
- salt & pepper to taste
- Garnishes for topping: grated cheddar/sour cream
- 1 . Oil in big pot, med heat. Brown sirloin in batches, remove. Add ground beef & chorizo and onions to brown, return sirloin to the port.
- 2 . Stir in remaining ingredients except for garnishes. Bring to boil, reduce heat and simmer for 2 hrs. Stir occasionally, breaking up tomatoes.
- 3 . Before serving, discard bay leaves, cinnamon stick and jalapenos. Serve.
- I usually double this. If I don't use sirloin, I will use chuck to reduce the cost.
