- 1 cup sugar
- 3 Tbsp. water
- 3 Tbsp. butter, cubed
- 3/4 cup unsweetened full fat coconut milk
- 1 Tbsp. dark run
- 1/4 tea. vanilla

Step 1
Coconut-Rum Carmel Sauce: Mix sugar and water in saucepan. Stir occasionally over low heat until sugar dissolves into a non-grainy liquid (7-10 minutes). Increase heat to medium-high and stir constantly while mixture boils, until sugar is lightly caramel in color (7-10 minutes). Reduce heat to medium. Add cubed butter, stir to combine. Mixture will foam. Slowly add the coconut milk while stirring constantly. Reduce heat to medium-low and continue to stir 3-5 minutes until mixture is smooth and thickens. Add rum and vanilla, stir 1 more minute, them remove from heat. Mixture will continue to thicken.
Pound cake: Grill until toasted (about 3 minutes). Flip and grill about another 3 minutes.
Pineapple slices: grill over direct heat 3-4 minutes.
