Preparation

Step 1

Thaw lobster tails completely in refrigerator over prior night.
If still a bit frozen, thaw using warm water for 2-3 minutes.

Line a pan with aluminum foil and position an oven rack in the 3rd position from the top.
Insert the empty pan and Pre-heat oven on Convection Broil - Quick Preheat - 550F

Using scissors, cut the shell from the front, down the middle to the tail.
Snap the shell open, butterflying the lobster tail, but leaving the meat in the shell.

Repeat for the other tail.

Brush the meat with melted butter and lightly sprinkle on paprika, and pepper.
DO NOT ADD SALT.

When oven is preheated (about 5 mins), put in lobster tails.

Prepare a cup of drawn butter in microwave.

Broil for about 5-6 min, with a maximum of 7 min.

Serve with drawn butter.
