Ingredients

  • 2 tbs EVOO
  • 2 cups 1/2 cubes of butternut squash
  • 1 cup coarsely chopped onion
  • 2 cups fresh corn kernels
  • 2 cups diced tomatoes
  • 3 gloves garlic, minced
  • 1/2 cup torn pieces fresh mozzarella cheese
  • 2 tbs snipped fresh basil

Preparation

Step 1

1. Heat oil in a large skillet. Add squash and cook for 10 min over med high heat, stirring frequently. Add onion and cook for 10 min more or until squash and onion are soft.

2. Stir in corn and cook for 5 min. Add tomatoes and garlic and cook until heated through. Top with cheese and basil and cook until cheese melted.
