  • 1/2 cup (125mL) Compliments 100% Natural Peanut Butter
  • 1/2 cup (125mL) Compliments Chicken Broth, 30% less sodium
  • 2 tbsp (30mL) soy sauce
  • 2 tbsp (30mL) Compliments Liquid Honey
  • 1 tbsp (15mL) fresh lime zest
  • 2 tbsp (30mL) fresh lime juice
  • 2 tsp (10mL) Sensations by Compliments Chili Pepper Seasoning Paste
  • 4 boneless, skinless, chicken breasts
  • 1/4 tsp (1mL) eash salt and pepper
  • Lime wedges and finely diced red bell pepper, for garnish.

Step 1

1. Whisk together peanut butter, broth, soy sauce, honey, lime zest, lime juice and chili paste in a bowl until smooth; set aside. Reserve 1/3 cup (75mL) of marinade for later use. Place chicken in a shallow dish; coat well with remaining marinade, wrap and refrigerate for at least 30 min.

2. Preheat oven to 425F (220C). Remove chicken from fridge, discard used marinade and set chicken breasts in an oiled or parchment-paper-lined tray. Pour reserved marinade over chicken, season with salt and pepper and roast in the oven for 10 min.

3. Reduce temperature to 375F (190C) and continue roasting chicken to an internal temperature of 170F (77C), about 10 to 15 min. Allow to rest for 5 min, garnish and serve.
