Ingredients
- 8 eggs, beaten
- 1 cup ricotta cheese
- 1/2 cup milk
- 1/2 tsp. dried basil
- 1/4 tsp. salt
- 1/4 tsp. fennel seed, crushed
- 1/4 tsp. pepper
- 10-oz. pkg. frozen spinach, thawed and drained
- 1 cup tomatoes, chopped
- 1 cup shredded mozzarella cheese
- 1/2 cup green onions, sliced
- 1/2 cup salami, diced

Preparation
Step 1
Whisk together the eggs and ricotta cheese in a large mixing bowl; add milk, basil, salt, fennel seed and pepper. Fold in spinach and remaining ingredients; spread in a greased 13x9-inch baking pan.
Bake at 325 degrees for 30 to 35 minutes or until a toothpick inserted in center comes out clean; let stand 10 minutes before serving.
