GROUND*****Mediterranean Ricotta Turkey Burgers

These are EXCELLENT! Moist and tender - but that depends on the ricotta - don't leave it out - and NOT overcooking them.

Ingredients
- 16 oz. ground chicken or turkey
- 2 tbsp. finely chopped shallots, scallions or chives
- 1 clove grated garlic
- 1 tsp. Worcestershire sauce
- freshly grated zest of one lemon
- 4 tbsp. light ricotta cheese
- 1/2 cup panko
- 2 tablespoons freshly grated parmigiano reggiano
- 60 grams Kraft four cheese italiano light
- 4 ounces (113 grams) smoked turkey or chicken, finely diced
- 1/2 tsp. dried oregano or 1 tsp. fresh
- sea salt and freshly ground pepper
- 2 tbsp. each finely chopped fresh parsley and dill

Preparation
Step 1
* Place everything in a large bowl and season with salt and pepper. Gently combine, without over mixing, until evenly incorporated. Freeze two thirds for another meal and form remainder into 2 equal patties.
* To grill, preheat a grill to medium-high. Oil the grill rack well. Grill the patties, turning once, until done. It doesn't take long, about 3 - 4 minutes per side.
* To pan-fry, brush both sides lightly with olive oil and sprinkle with salt and pepper. Preheat oven to 400. Brown patties in a skillet over medium heat on both sides, turning once. Transfer to preheated oven and cook until done in the centre, 8 to 10 minutes total. DON'T OVERCOOK.
* Serve as is for Dan, I like some lemon wedges squeezed over mine if not serving in a bun as a burger.
* If serving as a burger, spread top bun with a mixture of mayo, dijon and sriracha mayo (last on mine only) top burger patty with some arugula for me and a handful of French's onion strings for both.
