***Dude's Wild Mushroom Soup

Ingredients
- 3 tablespoons butter
- 3 ounces chopped shallots (about 2 large)
- 1 1/2 pounds wild mushrooms, cleaned and coarsely chopped
- 3 cups chicken stock
- 2 bay leaves- Dude does not use.
- 2 1/2 cups heavy cream
- Salt and pepper to taste
- 1 bunch chives, chopped

Preparation
Step 1
1. Melt the butter in a large, heavy pot. Add the shallots and cook for 1 minute, stirring once or twice. Add the mushrooms and cook over high heat, stirring occasionally, until they release some of their liquid, about 5 minutes.
2. Add the stock, bay leaves, cream, salt and pepper. Bring to a boil, reduce heat and simmer for 25 minutes.
3. Remove from heat and let cool for a few minutes. Discard the bay leaves. Working in batches, puree the soup in a blender until very smooth, about 2 minutes. If you want an even smoother texture, you may force the soup through a fine sieve.
4. Reheat gently if necessary.
5. Serve in bowls or large soup plates; garnish with chives.
