Ingredients

  • 6-8 medium apples, sliced
  • 4 eggs
  • 1 C oil
  • 2 C sugar
  • 3 C flour
  • 1 T baking powder
  • 1/4 t salt
  • 1/4 C orange juice
  • 1 T vanilla

Step 1

Preparation
Preheat over to 350
oil and flour a tube pan (I used a 10" angelfood cake pan, but a 9" works, it just takes longer to bake)
Mix together
2 T sugar
1 t cinnamon and sprinkle on apples
Mix eggs and then oil on medium until blended.
Mix in sugar
Mix in dry ingredients until just blended.
Blend in orange juice and vanilla until just incorporated.
Put 1/2 batter in pan
layer 1/2 apples
layer remaining batter
top with remaining apples, arranged in concentric circles
and drizzle with remaining cinnamon sugar
Bake for 1 to 1 1/2 hours, or until tester comes out clean
