Ingredients

  • 1 cup cooked wild rice*
  • 1 can cream of mushroom soup
  • 1 1/2 cups cooked breakfast sausages or bacon
  • 1/2 diced onion
  • 1 1/2 cup shredded cheddar cheese
  • 6 beaten eggs
  • salt and pepper to taste

Preparation

Step 1

Heat oven to 375. Spray a 9x9 baking dish with oil, mix together ingredients in large bowl, and bake for 40 minutes.

*To cook wild rice:
Bring 4 cups water to a boil
Add 1 cup wild rice, return to boil
Cover pan, reduce heat & simmer approx 45 minutes
If still firm & chewy - simmer 10-15 more minutes
Drain & serve
