- 2 slices of your favorite bread (sourdough or country white works well)
- 2-3 oz soft goat cheese (chèvre)
- 2 Tbsp red pepper jelly (or to taste)
- 1 Tbsp butter or mayonnaise for the outside of the bread

Step 1
Prepare the bread: Spread butter or mayonnaise on one side of each slice of bread. The buttered/mayo side should face outwards when assembled for toasting.
Assemble the filling: On the non-buttered sides, spread a generous layer of goat cheese on one slice and the pepper jelly on the other. If adding optional greens, layer them over the pepper jelly or cheese.
Combine: Place the two slices of bread together to form the sandwich.
Cook:
Heat a skillet or frying pan over medium heat.
Place the sandwich in the pan.
Cook for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and warm. Gently pressing down with a turner can help ensure even toasting.
Serve: Remove the toastie from the pan, let it cool for a minute, then slice and serve immediately.
