This is not the BROWN GRAVY Swiss Steak the gave you in your school lunch! Rich tomato base with peppers, onion, celery and garlic makes for real DELICIOUS comfort food!

Ingredients

  • 1- 1/2 LBS Round Steak
  • 2-3 Large sliced onions
  • 1 Large green (yellow or orange) pepper
  • 3 Stalks diced celery
  • 2 Cups flour
  • 2 tsp salt
  • 1 TBS pepper
  • 5 Cloves garlic smashed
  • 3 TBS EVOO
  • 2 Cans peeled tomatoes
  • 1 TBS white sugar (optional
  • but I always use some
  • sugar to counteract the
  • tomato acidity)

Preparation

Step 1

Combine salt, pepper and flour

Step 2

Spread flour mixture on flat surface. Using a meat mallet pound meat while on the flour mixture. Turn and repeat until fully floured and "tenderized"

Step 3

Heat oil in a large skillet (or ducth oven) and brown meat on both sides.

Step 4

Add all other ingrdients to pan. Cover and simmer 2 hours or until tender. UNCOVER the last 30 minutes to allow sauce to thicken,

Step 5

Serve over mashed potatoes (my preference) or noodles

equivalent amounts of home made tomato sauce make it even better!
If you have any leftover tomato sauce from pasta sauce etc. THROW IT IN...use it in place of part of the tomatoes
I sometimes add 2 or 3 diced carrots (large dice) for additional body and a little "vegie sweetness"
