  • 2lbs Roma tomatoes
  • 2lbs tomatillos
  • 3oz guajillo
  • 1 white onion
  • 6 garlic cloves
  • 2 tbsp kosher salt
  • 2 cups oil

Preparation

Step 1

Preheat a pot over medium heat. Add romas, tomatillos, onion, and garlic. Toss with oil and cover the pot. Continue cooking until the tomatoes and tomatillos are cooked all the way through.

Step 2

In a separate sauté pan, toast the chilis over medium high heat until they become soft and fragrant.

Step 3

Cook until the tomatoes and tomatillos become tender

Step 4

Working in batches, blend all ingredients together until smooth. Season to taste with salt and pass the salsa through a strainer

Step 5

Cool the salsa completely before serving. Store it covered in the refrigerator
