Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter
- 10.5 oz cream cheese
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla
- 1 TBS lemon juice
- 1 1/2 TBS all purpose flour
- 3/4 cup sour cream

Preparation
Step 1
Mix graham cracker crumbs with melted butter. Divide evenly into 12 muffin liners or 24 mini
Step 2
Using low speed on mixer, mix cream cheese until just creamy. Gradually add in sugar, then add eggs one by one, mixing just until well combined
Step 3
Add vanilla, lemon juice, flour and mix again until combined. Finally add sour cream and mix.
Step 4
Using an ice cream scoop, divide the cheesecake filling evenly into prpared muffin pan. Gently shake the pan to make the top flat.
Step 5
Bake at 320 degrees for 15 minutes. The cheesecake will wiggle and not be quite set
