Ingredients

  • 2 eggs, beaten
  • 1.5 C. baby spinach, chopped
  • (3.5 cups whole)
  • 1 small bunch fresh mint,
  • chopped
  • 1 small red onion, finely
  • chopped
  • 3 cloves garlic, minced
  • 2 lbs ground turkey (any
  • ground meat will work)
  • salt & pepper to taste
  • 2/3 C feta, cubed small
  • Tsatziki

Preparation

Step 1

Preheat oven to 400. Line a baking sheet with parchment paper. In a large bowl, mix together the beaten eggs, chopped baby spinach, mint, onion and garlic. Toss in the meat, breadcrumbs, salt and pepper to taste and feta. Gently combine everything. Form medium sized meatballs.

Step 2

Bake for 20 minutes or until internal temperature reaches 165. NOTE: You can also pan fry these in a few batches, in a pan coated with olive oil. Cook 8 minutes per side or internal temp reaches 165.

Step 3

Serves great with Tsatziki Sauce.
