Ingredients

  • Cooking spray
  • 1 bag (32 oz) southern-style hash brown potatoes
  • 2 C chopped ham
  • 1 C frozen onion
  • 10 oz shredded Swiss cheese, divided
  • 1 jar (4.5 oz) sliced mushrooms, drained
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 1 C whole milk
  • 2 Tbs butter, melted

Preparation

Step 1

Preheat oven to 350*. Coat a baking dish with cooking spray.

Step 2

In a large bowl, combine potatoes, ham, onion, half of the Swiss cheese, the mushrooms, salt and pepper.

Step 3

In a medium bowl, whisk together soup, milk and melted butter. Add soup mixture to potato mixture, stirring to combine. Pour into baking dish and top with remaining Swiss cheese.

Step 4

Bake for 35 minutes. Increase oven temperature to broil and broil for 5 minutes longer, or until cheese is lightly browned. Serve hot.
