Ingredients
- For the Sear:
- 2 tsp Sugar
- 1/2 TBSP Salt
- 1/2 tsp Pepper
- For the Marinade:
- Basil
- Olive oil
- Shallot
- 1/2 tsp crushed red pepper
- 2 TBSP Red Wine Vinegar
- 2 TBSP Lemon Juice
- 1 TBSP Honey
- 1 Garlic Clove, minced
- 1/2 tsp Salt
- 1/4 tsp Pepper

Preparation
Step 1
Rub flank steak with salt/pepper/sugar combo and sear on the grill to get a nice crust - approx 2 min each side.
Step 2
Cut steak in half, length-wise on the skinny edge, then slice it thin, creating lots of surface area for the marinade to coat.
Marinate sliced, seared meat in fridge for a minimum of 1 hour - up to 24 hrs.
Finish on the grill to desired temp (125 deg), rest 10 minutes in tinfoil.
