Ingredients

  • 2 Tbsp olive oil
  • 1 cup finely diced white onion
  • 1/2 cup finely diced celery
  • 2oz diced pancetta
  • 1 lb ground pork
  • 1 lb pound round
  • 1 28oz can crushed tomatoes
  • 1 1/2tsp kosher salt
  • 3/4 tsp black pepper
  • 1/4 tsp crushed red pepper
  • 1 bay leaf
  • 1/2 cup half & half
  • 3 cups zucchini noodles
  • 3/4 cup (3oz) grated '
  • Parmesan
  • Chopped fresh oregano (optl)
  • cheese

Preparation

Step 1

Select SAUTE setting on a programmable pressure multicooker. Select HIGH temp setting, and low to preheat 3 minutes. Add oil, onion, celery and pancetta; to cooker. Cook, stirring constantly, 5 minutes. Add grd pork and beef, cook until lightly browned and crumbled, about 5 minutes.

Step 2

Add tomatoes, salt, black pepper, crushed red pepper, and bay leaf, and stir to combine. Press CANCEL on cooker. Cover cooker with lid, and lock in place. Turn steam release handle to SEALING position. Select MANUAL/PRESSUE COOK setting. Select HIGH pressure for 8 minutes. (It will take 16 to 18 minutes for cooker to come up to pressure before cooking begins)

Step 3

Carefully turn steam release handle to VENTING position, and let steam fully escape (float value will drop). (This will take 3 to 4 minutes). Remove lid from cooker, discard bay leaf. Press CANCEL and then SAUTE setting, and stir in half and half. Simmer until thoroughly heated, about 3 minutes. Spoon sauce over zucchini noodles; top with Parmesan. Sprinkle with oregano, if desired.
