Ingredients
- 1 eggplant, tip removed & sliced
- Olive Oil
- Salt, oregano
- 1 tomato
- 125 grams Mozzarella cheese cubed
- 1 tsp chili flakes

Preparation
Step 1
Cut tip from eggplant. Slice lengthwise for about 6 slices. Lay slices in baking dish. Brush both sides of slices with olive oil, salt, pepper and oregano
Dice tomato, set aside in a small bowl.
Dice mozzarella cheese. Add to tomato
Add 1 tsp chili flakes and mix gently
Step 2
Spoon tomato mixture over each eggplant slice.
Step 3
Bake at 350 for 15 minutes.
Step 4
remove with spatula.
