Ingredients
- For the Rub:
- 2 tablespoons freshly ground coffee
- 2 tablespoons kosher salt
- 2 tablespoons paprika
- 1 tablespoon ancho chile powder
- 1 tablespoon dark brown sugar
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon ground black pepper
- 1/2 teaspoon cocoa powder
- 1/2 teaspoon coriander
- 2 racks spare ribs preferably St. Louis cut
- Stout barbecue sauce (optional)

Step 1
Mix all seasoning ingredients in a bowl. Remove membrane from the ribs and rub the seasoning liberally all over the meat. Wrap and refrigerate overnight or for a few hours. Remove from refrigerator and warm oven to 225 degrees. Place ribs on foil lined baking sheet and then tightly wrap with foil. Bake for 5 to 6 hours. If using sauce, brush on meat and bake an additional 20 minutes or until caramelized.
