Ingredients

  • 1 chicken breast (cut in half
  • horizontally)
  • 2 eggs
  • 1/2C flour
  • 2 Tbsp milk
  • 1 tsp Rosemary
  • 1 tsp sage
  • 1/4 tsp black pepper
  • 2C Panko breadcrumbs
  • avocado or olive oil
  • salt to taste

Preparation

Step 1

Cut chicken breast in half horizontally, place on cutting board, cover with waxed paper and pound until uniform in thickness. alt & pepper both sides and set aside.

Step 2

In a bowl, whip together crack two eggs, 2 Tbsp milk and a pinch of salt. In another bowl, mix together 2 cups panko, 1 tsp rosemary, 1 tsp sage, 1/2 tsp black pepper and 1/4 tsp salt. In another bowl, add 1/2 cup flour - coat chicken and shake. Dip in egg mixture.

Step 3

Coat in panko mixture - press to stick on chicken. Fry in oil for 5 minutes on each side. Sprinkle with sea salt when comes out of skillet. Let rest for 5 minutes on rack before serving.
