Ingredients

  • 2 1/2 cups all purpose flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 1 1/4 cup white sugar
  • 2 large eggs
  • 1/2 cup milk
  • Zest of one orange
  • 1 tsp vanilla extract
  • 1/4 freshly squeezed orange juice (usually 2 naval oranges)
  • 1 1/2 cup fresh cranberries (NOT dried)

Preparation

Step 1

Preheat oven to 425 degrees F. Line muffin tray with paper liners (parchment liners are best).

Step 2

In large bowl, toss together flour, baking paper et and salt. Set aside.

Step 3

In medium bowl, whisk together vegetable oil, milk, eggs, sugar, vanilla, orange zest and orange juice. Slowly add wet to dry ingredients.

Step 4

Mix until JUST combined, then fold in cranberries (if frozen, no need to thaw). Nut into muffin tray level with top of muffin liner.

Step 5

Bake at 425 degrees F for 5 minutes, then reduce oven temp to 375 and bake for another 13-15 minutes until toothpick comes out clean or you see cracks in top of muffin.

Step 6

Can be stored in fridge up to 5 days, if freezing max 3 months.
