Ingredients
- 1 pound Cheddar or other hard, flavored cheese
- 2 cups flour
- pinch cayenne
- 8 tablespoons chilled butter
- Few drops ice water
- Coarse salt

Preparation
Step 1
Preheat oven to 450 degrees
Step 2
Grate the cheese, then remove cheese from bowl. Add the flour and cayenne to the bowl and pulse. Cut the 8 tablespoons of butter into pieces, then toss in to bowl. Process until butter and flour are combined.
Step 3
Remove the dough from the bowl and stir in the cheese. Knead by hand until it comes together, adding of few drops if ice water if necessary.
Step 4
Roll out into a rectangle about 1/4 inch thick, then cut into strips as long as you like and about 1/2 inch wide. Please on lightly greased baking sheet and sprinkle with salt. Bake until golden brown, about 5 to 8 minutes. Serve hot, warm or at room temperature.
