Ingredients

  • 4 ounces butter, chopped
  • 2 tablespoons rice flour
  • 3/4 cup flour
  • 2 tablespoons icing sugar
  • 1/3 cup drinking chocolate
  • Topping:
  • 4 3/4 ounces white chocolate, melted
  • 1 ounce white vegetable shortening
  • 2 ounces dark cooking chocolate, melted

Preparation

Step 1

Preheat oven to 315 degrees. Line two oven trays with baking paper.

Step 2

Combine butter, flours, sugar and drinking chocolate in food processor. Process until mixture comes together.

Step 3

Turn mixture until lightly floured surface; knead gently until smooth. Divide into four. Roll each portion into a long log 1/2 inch in diameter. Cut logs into 1 1/4 inch lengths. Place on prepared trays. Bake 10-12 minutes. Cool on racks.

Step 4

Combine coarsely chopped white chocolate and vegetable shortening in small heatproof bowl; stand over pan of simmering water. Stir until chocolate has melted and mixture is smooth. Remove from heat.

Step 5

Dip shortbreads in melted chocolate and place on prepared tray to set. Place dark chocolate in piping bag and drizzle over shortbreads.
