Ingredients

  • 2 cups Madeira cake crumbs
  • 2 tablespoons chopped glace orange peel
  • 1 tablespoon apricot jam
  • 2 tablespoons cream
  • 3 1/3 ounces white chocolate, melted
  • Chocolate Coating:
  • 4 3/4 ounces white chocolate
  • 2/3 ounce white vegetable shortening

Preparation

Step 1

Line an over tray with foil.

Step 2

Combine cake crumbs in bowl with chopped peel, jam, cream and chocolate; mix to a smooth paste.

Step 3

Roll 2 teaspoons of mixture into balls.

Step 4

To make chocolate coating:
Combine chocolate and shortening in bowl; stand bowl over pan of simmering water. Stir until melted. Dip balls in chocolate; allow to set on tray.
